Flower Crab & Chayote Soup

Makes 4-5 bowls

2 flower crabs, rinsed well, remove gills, organs and entire mouth parts
1 chayote, cut into chunks
1 green capsicum, cut into chunks
1 french onion, cut into quarters
5cm young ginger, slice
1 stalk of spring onion, cut into 1 inch length
1 stalk of chinese parsley, cut into 1 inch length
1/2 cup chicken stock
2.5 litres of water


  1. Bring chicken stock and water to boil
  2. Boil ginger, onion and chayote for 15 mins
  3. Add flower crab and capsicum
  4. Boil for 5 mins
  5. Add salt and pepper to taste
  6. Add spring onion and chinese parsley
  7. Serve immediately
