Preparing Pig Stomach for Hot Pot


Ingredients

1 pig stomach, about $5-6 for small piece
Salt
Tapioca flour
Vinegar

For cooking
40gm ginger
4 tbsp whole white pepper
1 tsp salt

Method

Preparing pig stomach

  1. Turn pig stomach inside out
  2. Add salt, tapioca flour and vinegar
  3. Rub all over
  4. Rinse and repeat
  5. Rub tapioca flour all over pig stomach
  6. Use a knife to scrap away the flour, slime and yellowish fats
  7. Rinse
  8. Turn the pig stomach to its outside
  9. Use a scissor to trim away the fats
  10. Rinse
  11. Blanc the pig stomach with hot boiling water
  12. Discard water
  13. Pig stomach is ready for simmer

Simmering the pig stomach

  1. Add ginger, pepper and salt into a pot
  2. Add enough water to simmer pig stomach for 2 hours or to your desired texture
  3. Discard water
  4. Let pig stomach cool down before cutting into slices
  5. To serve, just scald in hot pot before consuming
