Threadfin Fillet in Fermented Beans

2 pieces of Threadfin fillet, rubbed with salt & pepper and coated with cornflour
40gm ginger, sliced thinly
4 shallots, sliced thinly
2 cloves garlic, minced
2 stalks spring onions, chopped
2 tbsp of fermented beans with its sauce
1 tbsp chinese wine
1 tbsp soya sauce

  1. Using small fire and 6 tbsp oil, fry ginger and shallots
  2. When ginger and shallots are beginning to turn brown, add minced garlic
  3. Fry till golden brown
  4. Set aside crisps and leave oil in wok
  5. Using medium fire, fry the fish fillet for 1 min on both side
  6. Add 1 cup of hot water
  7. Add fermented beans, chinese wine and soya sauce
  8. Cook for about 2 minutes
  9. Add spring onions
  10. Switch off fire
  11. Dish out and topped with ginger and shallots crisps
  12. Serve with porridge
