Steamed Tau Kwa with Seafood

Make 20 pieces

1 tau kwa, sliced into squares of 1.5 cm thickness
1 container of fish paste
20 pcs of prawns, shells removed and coarsely chopped
1 egg white
2 tsp cornflour
1 clove garlic, finely minced
1 stalk spring onions, chopped
1 tbsp wolfberries


Preparing Tau Kwa 
  1. Fry tau kwa till light golden browned 
  2. Drained oil on paper towel 
  3. Set aside 
Preparing Seafood Paste 
Mixed fish paste, prawns, egg white, cornflour, garlic with 1 tsp fish sauce and half tsp sesame oil till well combined

Preparing Stock for Steaming 
Mixed 2 tbsp fish sauce, 2 tbsp soya sauce, 1 tbsp chinese wine with 3/4 cup water

Preparing Tau Kwa for Steaming
  1. Spoon seafood paste onto tau kwa
  2. Arrange 6 - 7 pcs of tau kwa in three shallow dishes
  3. Divide and pour the stock into three shallow dishes
  4. Add wolf berries around the tau kwa
  5. Add spring onion onto seafood paste
  6. Steam on high heat for 5 mins
  7. Serve immediately
Do not deep fry the tau kwa for too long as the crust will become too tough. Lightly browned will be just nice.
