Vegetables & Mushroom Fritters

2 packs of golden mushroom, cut off ends
1 green capsicum, sliced into thin strips
1 sweet potato, sliced into thin strips
1 yellow onion, sliced into thin strips
90gm self raising flour
45gm rice flour
225ml water
1/2 tsp salt

  1. Mix self raising flour, rice flour and water into a smooth runny batter
  2. Add a handful of vegetable to the batter and coat well
  3. Squeeze out excess batter
  4. Scatter the vegetable loosely into the hot oil
  5. Test with a tong, loosen the vegetable when the batter does not sticked
  6. Fry until golden brown
  7. Drain away oil on paper towel
  8. Serve warm

  • Use the same method for golden mushroom
  • For 1 pkt of enoki mushroom, I used 50gm self-raising flour, 25gm rice flour mixed with 150ml water.
