Makes 24 mini cupcake size
Ingredients
1 cup tapioca flour
1 egg
Half cup milk
Half cup vegetable oil
Half cup parmesan cheese
1/4 tsp salt
Cheddar or Cream cheese, cut to cubes (optional)
Method
- Preheat oven to 190 degrees
- Grease your baking tray up or lay paper cups
- Add all ingredients in a blender
- Blend till smooth
- Pour into pipping bag, or use a tablespoon to scoop the batter
- Fill cups till halfway
- Add cheese cubes, press it down till its fully submerged
- Bake for 20 - 25 mins until lightly browned
- Cool on rack
- Serve warm or reheat in toaster before serving
Notes
- You can omit cheddar cheese cube in the filling and increase parmesan cheese to one cup.
- Grease your baking moulds with generous amount of oil all the way to its rim
- This recipe sticks to baking cups so I would advise baking directly into the baking mould
- The longer it bakes, the drier its texture.
