Crispy Chicken Chop with Mushroom Sauce

Recipe from Hey Chef: Episode 9 (Time 14:25)

Ingredients
4 pieces of boneless chicken legs, marinated with half tsp of sea salt, 2 eggs & 2 tbsp plain flour for 15 minutes.

1 punnet of fresh mushrooms, sliced
1 clove of garlic, minced
2 tbsp butter
Plain flour
Sea salt

Method

For Chicken Chop
Using a non-stick pan and slow to medium fire, add 2 tbsp oil and pan fry the chicken with skin side down first. Flip and pan fry both sides until golden browned. Set aside.

For Mushroom Sauce
  1. Using the remaining oil in the pan, add 2 tbsp butter, mushrooms and salt. Stir fry until mushrooms seeps liquid and softened.
  2. Scatter 2 tbsp of plain flour all over mushrooms and stir until flour disappears.
  3. Add hot water gradually until desired consistency.
  4. Salt & pepper to taste.
  5. Served over chicken chop.

Note

  • Recommends flattening the chicken meat to cook evenly.
  • After setting aside the chicken chop, it will seep out liquid so I recommend doing the sauce first so that the chicken chop can be served immediately.

Chicken Pot Pies

Make 8 ladies portions

It's a stew, it's a soup, it's a pie … it's pot pies!
My kids love the potatoes, rich creamy soup and the flaky pastry.
Make this comforting & delectable chicken pot pies from scratch.

I have made this with or without white wine.
Sometimes, I add parmesan or gruyere cheese.
It's your preference. Happy cooking!

INGREDIENTS

3 pieces of boneless chicken legs
Remove skin, cut into small bite size and marinate with 3 tbsp cornflour, 1 tsp dried italian herbs, 1 tsp salt and some freshly grounded black pepper.

3 potatoes, cut into chunks
5 slices of streaky bacon, diced
8 cloves of garlic, chopped
1 yelllow onion, diced
1 punnet of fresh button mushrooms, sliced
3 stalks of celery, diced
1 carrot, diced
50gm unsalted butter
200ml cooking cream
2 cups of water
1/4 cup of white wine (optional)
1 egg, beaten (for brushing pastry)
Readymade puff pastry

METHOD

Fry bacon until browned. Set aside.

Add more oil and fry onion until it turned transparent.

Add garlic and fry till fragrant.

Melt 50gm of unsalted butter.

Add mushrooms.

Fry mushrooms until softened.

Add chicken meat.

Fry until chicken meat turned brown on its sides.

Add carrot, celery, potato and bacon.

Mix well.

Add 2 cups of water and 1/4 cup of white wine.
Simmer until fork can poke through the potatoes but not completely softened and mashed.

Add cooking cream.

Season with more salt and pepper if necessary. Stir well.
If you want to replace carrots and celery with mixed vegetables, you should add them at this stage so that they won't be overcooked.

Portion the chicken stew into 8 ramekins.

Wrapped the puff pastry tightly around the ramekins. Brush the top with beaten egg. Poke a few holes on top. Bake at 200 degrees for 15 to 20 mins until puff pastry turned golden brown.

Leave it for 15 mins before consuming. The chicken stew is extremely hot & takes awhile to cool down.

Enjoy!

Homemade Chicken Rice

Serve 3 to 4

Geraldine Gan from Gerry's Chicken Rice was sharing her chicken rice recipe in Singapore Home Cooks, which inspired me to blog about my granny's chicken rice recipe.

I couldn't chopped the chicken as nicely as my granny's but I would like to share with you how it can be done at home. My grandparents sold Hainanese chicken rice four decades ago. I was only given the method of the recipe because the amount of ingredients was 'agar agar' or estimated. She said without MSG, the rice won't be as nice. However, I find that a generous amount of salt can be used to bring up the flavours of the rice. Apart from the aromatics, chicken fats is also crucial.

Ingredients

1 kampong chicken or spring chicken

For rice:
2 cups of rice
30 gm ginger
4 shallots
6 cloves of garlic
Half tsp of salt

For soup:
30 gm ginger
6 cloves of garlic
2 tsp salt
1 stalk of chinese parsley
Pepper to taste

Sauce for serving chicken:
Half cup of chicken stock
1 tbsp soya sauce
1 tsp chinese wine
1 tsp Sesame oil
Chinese parsley for garnishing

Method

Add one stalk of chinese parsley, 6 cloves of garlic, 30gm ginger and 2 tsp of salt and bring the water to a simmer. Add a few dashes of pepper to taste.

Set aside neck and feet for cooking stock. Remove the fats, rinse and drain away water by placing it on a paper towel. Set aside for cooking the rice.

Discard the tail.

Remove and discard the offals and tissues around the back.

Massage a generous amount of salt all over the chicken and rinse off the salt.

Add the neck, feet and whole chicken into the simmering pot of water. Bring to boil, immediately switch off the fire and cover the pot. Leave it for 30 mins without lifting the lid.

Note: This is a kampong chicken which is small in size. If you are using bigger chicken, please increase cooking time. To check if you chicken is fully cooked after 30 mins, the skin of the drumsticks should puffed up. Else, bring to a slow simmer, cover and cooked until skin of the drumsticks puffed up.

After 30 mins, transfer the chicken onto a dish and let it cool down before chopping.

After removing the wings and legs, the breast and back are separated by running through the ribs with a sharp chopper. The breast meat is deboned. The wings, back and breast bones are added back into the soup for further simmering of the soup.

The breast meat are placed at the bottom. The thighs and drumsticks are chopped and separated. Thighs are chopped into smaller pieces.

Blend 6 cloves of garlic, 4 shallots and 30 gm ginger until finely chopped. Set aside.

Using small fire and 2 tbsp of oil, render the chicken fats into oil.

The fats will liquefy and left with a rubbery remain of the fats. Discard the remnant.

Using small fire and the chicken oil, fry the finely chopped garlic, ginger and shallots until fragrant.

Add washed rice grains and stir well until grains are coated with the aromatics.

Transfer the rice grains into the rice cooker pot. Add half teaspoon of salt to the rice grains.

Add enough chicken stock especially the layer of fats floating on top, for cooking the rice. Please stick to the water level required for 2 cups of rice and do not try to add more stock when you see the water level lower than usual. The rice grains will turned out firm and fragrant. For the rest of the chicken stock, you can simmer with some cabbage and serve it as part of the meal.

Simmer half cup of chicken stock with 1 tbsp of soya sauce, 1 tsp of chinese wine and 1 tsp of sesame oil. Drizzle the sauce over the chicken. Garnish with chinese parsley.

Serve with garlic chilli sauce and caramel sauce.

My granny said blend equal amount of big red chilli and ginger, along with some salt and just enough water. Proportion of ingredients entirely up to your taste. If you like more spicy, replace with some chilli padi. If you like more ginger, just add more ginger. Just like that! This method of preparation does not keep well so please make small amount for immediate consumption.

This is so worth it!!!

Baked Chicken in Milk

Adapted from Jamie Oliver

This is a frequent meal on my dining table especially when I need to bring my kids for extra classes. It is so convenient to popped this into the oven and set it to one hour timer. The house is filled with smell of lovely baked chicken when I returned home four hours later.

Ingredients

One chicken, rinse and pat dry
Watch video on how to remove chicken head, feet and tail with scissor

600ml full cream milk (I prefer Meiji as it's more creamy)
4 potatoes, remove skin, cut halves
2 whole garlic, leave skin on
1 carrot, cut chunks
1 tbsp dried Italian herbs
Freshly grounded black pepper to taste
Sea salt to taste

Method

1. Preheat oven to 180 degrees.

2. Rub a generous amount of sea salt all over chicken.

3. Using a pot that can fit the chicken snugly, place the chicken breast down in the pot.

4. Switch to fan grill mode, grill the chicken for 15 mins. I did not flip the chicken.

5. After 15 mins, switch off fan mode. Oven temperature maintains at 180 degrees.

6. Remove pot from the oven carefully.

7. Pour milk into pot.

8. Add carrots and garlic into the milk.

9. Laid potatoes around the chicken.

10. Add few dashes of Italian herbs, generous amount of sea salt and freshly grounded black pepper all over potatoes and carrots.

11. Bake the chicken on the lowest rack at 180 degrees for 2 hours. If you find the chicken browning too fast, cover the chicken with aluminium foil but not the entire dish. Add thicken cream at the end of cooking gives you a more creamy broth.

12. To serve, pull out chicken meat from the bones, spoon plenty of juice over and serve with carrots and potatoes.

Other attempt

If you don't mind the extra calories, rubbed salt and melted butter all over the chicken before grilling and it will give you a nicely browned chicken skin and buttery gravy.

If you don't have a pot, you can use baking tray too.
