Ingredients for garlic butter rice
2 cups of rice
2 tbsp butter
1 tsp garlic powder
1 tsp onion powder
A dash of dried Italian herbs
A handful of mixed vegetables
Chicken stock to cook rice
Method
- Cook rice with chicken stock, garlic & onion powder.
- Once the rice is cooked, add butter & mixed vegetables immediately. Mix well.
- Set aside in a baking dish.
Ingredients for topping
8 strips of chicken fillets, cut into bite size and marinate with half tsp of garlic powder & half tsp of onion powder
400ml cooking cream
200gm shredded cheddar/parmesan/mozerrella cheese
2 tbsp butter
2 tbsp plain flour
Method
- Fry chicken fillet with olive oil.
- Laid chicken fillet over cooked rice.
- Using the same pan, scatter flour over the melted butter and stir until incorporated.
- Add cooking cream gradually and stirring constantly until a smooth thickened sauce is formed. Let it cool down abit.
- Mix cold shredded cheddar to the sauce.
- Pour sauce over the rice and chicken.
- Fan-grill the dish at highest temperature until nicely browned.
