Cheesy Chicken Baked Rice



Ingredients for garlic butter rice
2 cups of rice
2 tbsp butter
1 tsp garlic powder
1 tsp onion powder
A dash of dried Italian herbs
A handful of mixed vegetables
Chicken stock to cook rice

Method
  1. Cook rice with chicken stock, garlic & onion powder.
  2. Once the rice is cooked, add butter & mixed vegetables immediately. Mix well.
  3. Set aside in a baking dish.

Ingredients for topping
8 strips of chicken fillets, cut into bite size and marinate with half tsp of garlic powder & half tsp of onion powder 
400ml cooking cream
200gm shredded cheddar/parmesan/mozerrella cheese
2 tbsp butter
2 tbsp plain flour

Method
  1. Fry chicken fillet with olive oil.
  2. Laid chicken fillet over cooked rice.
  3. Using the same pan, scatter flour over the melted butter and stir until incorporated.
  4. Add cooking cream gradually and stirring constantly until a smooth thickened sauce is formed. Let it cool down abit.
  5. Mix cold shredded cheddar to the sauce.
  6. Pour sauce over the rice and chicken.
  7. Fan-grill the dish at highest temperature until nicely browned.
