Braised Duck Wings with Eggs and Mushrooms


Ingredients
8 duck wings
8 hard boiled eggs
4 dried mushrooms, rinse
1 whole garlic, leave skin on
6 slices of blue ginger
1 star anise
1/2 cup soya sauce
1/2 cup caramel sauce
20gm rock sugar


Method
  1. Add all ingredients and seasoning in claypot
  2. Add about 4-5 cups of water
  3. Cover and simmer for 1.5 hours
  4. Open the cover, reduce the sauce using medium heat
  5. Add chinese parsley
  6. Serve with rice

Note
I'm using a 2.9 liters Tanyu claypot

Other attempt


Added chinese wine, sesame oil and rice vinegar to this stew.





I blanched some rice noodles, add the braised duck sauce and shallots. Not forgetting some sambal belacan. I highly recommends Taho samba belacan for this dish.

Fried Bee Hoon with Cabbage, Carrot and Fried Shallots


Serve 5 - 6 as part of a meal

Ingredients
1pkt of Chilli Brand bee hoon, soak till slightly soft, drain
1/2 Chinese cabbage, remove core, slice
1 carrot, slice thinly
10 shallots, slice thinly
8 cloves garlic, mince
2.5 cups chicken stock
2 tbsp oyster sauce
1 tsp salt

Method
Frying the shallots

  1. Using low heat, fry shallots with half cup of oil till golden brown
  2. Set aside
  3. Leave its oil in wok



    Cooking the bee noon

    1. Using small fire, fry garlic till fragrant
    2. Add salt
    3. Add cabbage and carrots
    4. Stir fry for a minute using medium heat
    5. Add chicken stock and oyster sauce
    6. Bring to boil
    7. Add bee hoon
    8. Mix well until stock is fully absorbed
    9. Switch to low heat
    10. Using a serving tong, lift up bee hoon to mix well
    11. Garnish with fried shallots and chinese parsley

    Tuna Apple Mayonnaise



    Ingredients

    2 cans of tuna chunks in water, squeeze tuna to drain away water
    1 small jar of mayonnaise (about 220ml)
    Half green apple, dice
    Half red or yellow onion, remove core, dice
    2 tbsp lemon juice

    Method

    1. Mix everything together
    2. Grind some black pepper
    3. Serve with toast and chips
    4. Chill leftover in airtight container
