Cheesy Chicken Baked Rice

Ingredients for garlic butter rice
2.5 cups rice
2 tbsp butter
2 cloves garlic, finely chopped
A handful of mixed vegetables
A pinch of salt

  1. Cook rice with water, garlic & salt. I used lesser water so that my rice is drier.
  2. Once the rice is cooked, add butter & mixed vegetables. Mix well.
  3. Set aside in a baking dish.

Ingredients for topping
6 strips of chicken fillets, cut into bite size and marinate with dried Italian herbs, salt & pepper.
1 red onion, chopped
1 garlic, chopped
600ml cooking cream
200gm shredded red and white cheddar cheese
2 tbsp butter
2 tbsp plain flour
A handful of chopped chinese parsley

  1. Fry garlic and onion with olive oil until fragrant.
  2. Add chicken fillet. Do not overcooked.
  3. Laid chicken fillet on top of garlic butter rice.
  4. Scatter chinese parsley all over.
  5. Using the same pan, scatter flour over the melted butter and stir until incorporated.
  6. Add cooking cream gradually and stirring constantly until a smooth thickened sauce is formed. Let it cool down abit.
  7. Mix cold shredded cheddar to the sauce.
  8. Pour sauce over the rice and chicken.
  9. Fan-grill the dish at 180 degrees until nicely browned.
