Cheesy Chewy Chipa (aka Brazilian Cheese Bread)

Makes 24 mini cupcake size



Ingredients
1 cup tapioca flour
1 egg
Half cup milk
Half cup vegetable oil
Half cup parmesan cheese
1/4 tsp salt
Cheddar or Cream cheese, cut to cubes (optional)



Method
  1. Preheat oven to 190 degrees
  2. Grease your baking tray up or lay paper cups
  3. Add all ingredients in a blender
  4. Blend till smooth
  5. Pour into pipping bag, or use a tablespoon to scoop the batter
  6. Fill cups till halfway
  7. Add cheese cubes, press it down till its fully submerged
  8. Bake for 20 - 25 mins until lightly browned
  9. Cool on rack
  10. Serve warm or reheat in toaster before serving


Notes
  • You can omit cheddar cheese cube in the filling and increase parmesan cheese to one cup.
  • Grease your baking moulds with generous amount of oil all the way to its rim
  • This recipe sticks to baking cups so I would advise baking directly into the baking mould
  • The longer it bakes, the drier its texture.
